| Vinification | As soon as the clusters are picked, they are brought to the cellar and pressed. Cultured yeasts are added to the must, which then ferments some 15 days at 24-26 °C, about 10 of which on the skins. |
| Aging | The wines matures 24 months in oak barrels and large oak ovals, then it receives a minimum of six months’ bottle-ageing. |
Other curiosities
Garnet-shot ruby dress. Precisely-delineated aromas of wild dark berries and other forest berry preserves predominate on the nose, enriched with scents of dried rose petals, crushed blackpepper, cinnamon and clove. On the mouth, it is warm and enfolding, impressively supported by emphatic tannins. A broad, generous finish seems to linger forever.
