Vinification | As soon as the clusters are picked, they are brought to the cellar and cryomacerated for about eight hours at 5-8°C in order to extract the grape’s primary aromas. After pressing, cultured yeasts are added to the must, which then ferments some 10 days at 16-18°C. |
Aging | The Manzoni Bianco matures 18 months in barrels and tonneaux, while the Traminer rests in stainless steel. After the final blending, the wine receives a minimum of four months’ bottle-ageing. |
Other curiosities
It appears an intense, luminous straw yellow. It immediately impresses with intense aromas of tropical fruit and citrus, hints of rosewater and jasmine, subtle toasty oak and lemon pastry creme. In the mouth it is generous and enfolding, with glycerine giving it a judicious weight. A crisp, clean-edged progression drives through to a longlingering, savoury finish that both continues and crowns the impressions on the palate.
