Vinification | After the harvest, the freshly picked grapes are taken to the cellar and de-stemmed. Before pressing, a cryomaceration is carried out at 5-8° for about 8 hours in order to extract the primary aromas. Selected yeasts are added to the free-run must and it is sent to fermentation, which takes place at a controlled temperature between 16° and 18°, for about 10 days. |
Aging | The wine obtained rests in steel, where it is aged for 5/6 months, before bottling. |
Other curiosities
Bright straw yellow with gold reflections. On the nose, the recognitions are typical: nuanced aromas, citrus fruits, yellow peach, acacia flowers, rose petals and wisteria, and a veil of minerality. The taste is satisfyingly balanced, enveloping, supported by pleasant freshness and flavor.
